After a long break we are now back on the blog. Yay!

This is a easy and refreshing cocktail Naomi and I came up with a couple of nights ago. It is not too sweet, so feel free to add some simple syrup if you like your cocktails a bit sweeter.
1 3/4 oz Gin
1 1/2 oz pineapple juice
1/2 – 3/4 oz fresh lemon or lime juice
1/2 oz falernum syrup
Sugar to rim the glass
Extra lemons or limes for garnish
First prepare your glass by rimming it in sugar. I use a shallow container of water and a shallow container of sugar to do this. Just dunk the rim of the glass in to the water and then spin in the sugar!
Pour the gin, pineapple juice, citrus juice, and falernum into a shaker and shake well. Pour over ice and fill the rest of the glass with soda water.
These are very refreshing and easy to make. We did not have any Collins glasses, so we made do with what we had. It worked pretty well!
1 1/2 oz Light Rum
3/4 oz Fresh lime juice
3/4 oz Pineapple juice
A few sprigs of mint
Chop a couple of sprigs of mint and toss them into a glass with ice. You can also muddle them if you have the tools. Then measure out and pour the rum, lime juice, and pineapple juice into a shaker with ice and shake well. Pour this mixture into the glass and fill the glass the rest of the way up with soda water. Garnish with a sprig of mint and enjoy!
We cut down standard size straws to make cute mini ones that fit our glasses.
